Meetha Kaddu - Favourite Himachali Sweet Dish

Himachal Pradesh is famous for variety of its mouth watering cuisines. They are several dishes which are prepared in the different districts of Himachal. People have been following the method of their preparation from their ancestors and these dishes have continued like a tradition in maximum parts of Himachal. One of such dishes I am going to share here.

'Meetha Kaddu'(Sweet Pumpkin) is one of the famous dishes in the different regions of the Kullu district. It is specially prepared at the time of occasions and celebrations like marriages, festivals etc. It serves as the sweet dish. Here I am going to elbaorate the method of preparation of this fantastic sweet dish.

Ingredients for Meetha Kaddu- Favourite Himachali Dish:

1. About 1kg of fresh pumpkin.

2. About 1 kg of 'Gur'

3. 4 table spoons of 'Desi Ghee'

4. 150 gms of cashew nuts.

5. 150 gms of almonds.

6. 150 gm of walnuts and groundnuts.

Method of Preparation of Meetha Kaddu-Favourite Himachali Dish:

1. First of all take the pumpkin and peel it properly. Now cut it into small sized pieces with the help of a knife.

2. Now take the pieces of 'Gur' and mesh them into very thin form so that when they are put into the frying pan, it does not take much time to melt them.

3. Now the ingredients are ready. Its the turn to mix and cook them. First of all place a big frying pan(Kadai) on the gas flame. Add the four table spoons of pure 'Desi Ghee' to it and let it heat up for 5 minutes.

4. After the Ghee gets well heated add the pieces of pumpkin into it. Mix the pumpkin pieces properly with Ghee. Place the lid on the frying pan and let the mixture cook well for 15 minutes.

5. Open up the lid. Now its the turn to put the 'Gur' into it, that actually adds the sweet flavour to it. Again cover it with lid and allow the 'Gur' to melt properly and mix with the pumpkin pieces.

6. In the mean time also add the mixture of dry fruits into the frying pan. These nuts gives a crunchy taste to the dish at the time of having it.

7. Now let it cook for few minutes and keep checking it in frequent intervals. When it tastes pretty well, stop the flame and remove the pan.

'Meetha Kaddu' is ready now for serving. You can have it with rice or simply it can act as a sweet dish after dinner. Hope you all find the recipe quite simple and will surely experiment with this fantastic dish at your homes.
